Semi Custom 8 inch Offset Fillet
I designed this offset fillet with Tommy Gomes, of the hit show, The Fishmonger. He is San Diego’s resident fishmonger and there’s few people that have butchered more fish them him. This is also an amazing knife for red meat and does incredible work getting underneath silver skin for cleaning whole tenderloins, hanging tenders, or anything like that.
